Ireland's most important celebration is about to begin and no, it's not St Patrick's Day.
National Potato Day is fast approaching and Bord Bia are urging everyone to join in the celebrations of the fourth annual National Potato Day on October 7.
New potato ambassador, the prize winning chef Mark Moriarty has been brought on board to support the campaign for Irish people to eat more spuds.
Mark will be showing consumers how potatoes can be prepared and cooked quickly, even for novice chefs with basic kitchen skills.
A number of mouth watering recipes will be available online at www.potato.ie including dishes such as Spanish Chicken, Chorizo and Potato One Pot; Pan-seared Cod with Potatoes and Chorizo; India inspired Potato and Chickpea Masala; Thai Chicken and Potato Stir Fry and an easy tray bake Moroccan Lamb Tagine.
1.65 million Irish households will buy 120 million packs of potatoes, spending an estimated €175 million on them this year.
Over 60 recipes from around the world are available on www.potato.ie highlighting the versatility and nutritional benefits of the popular tuber.
All recipes are quick to prepare in under 30 minutes and contain between 300 and 500 calories.
